Finca La Bendición is a masterclass in complexity from Nicaragua. The first few are reminiscent of tropical fruit, like pink pineapple. As this coffee cools, it transitions to wonderful ruby red grapefruit, tart key lime pie, and layered sweetness. A heavy body reminding us of heath bars, with caramel and nougat peaking through as this coffee comes to room temperature.
The care that Luis Alberto shows up in every sip. This is a unique lot of small bean Pacamara. The vast majority of Pamacara is that is sold on the market is a bean size of 18. This lot is a 13/14 size grading. This Honey lot starts by bringing the cherries to the wet mill after careful picking. They are then floated and de-pulped and immediately taken to Beneficio Las Segovias to be laid on African Beds to dry for 21 to 25 days. For the Naturals, the coffee also undergo careful picking, is then floated and also taken to Beneficio Las Segovias to be laid on African beds to dry for between 25-30 days.
